Za’atar isn’t just a spice blend.
It’s history. It’s memory. It’s defiance growing wild through cracked concrete in colonized lands.
In Palestine, za’atar — the fragrant wild herb — is more than flavor. It’s cultural identity. It’s a livelihood. It’s freedom. And it’s been criminalized.
Since 2006, foraging wild za’atar has been banned for Palestinians — a so-called environmental law weaponized to separate people from their land and heritage. Dozens have been fined or arrested for picking what once grew freely in their villages. Meanwhile, Israeli settlers grow and sell it commercially.
Still, za’atar grows. And so do we.
We cook with it.
We speak its name.
We resist — with every bite.

🍟 ZA’ATAR FRIES by Wafa Shami
📍 Ingredients
4–5 large Yukon Gold potatoes, peeled and cut into ¼-inch fries
3 tablespoons extra virgin olive oil
1½ tablespoons za’atar spice blend
Sea salt, to taste
📍 Instructions
Preheat oven to 220°C / 425°F.
In a large bowl, toss the potato fries with olive oil, ensuring they’re evenly coated.
Sprinkle za’atar and sea salt over the potatoes, tossing again to distribute the spices uniformly.
Arrange the fries in a single layer on a baking sheet lined with parchment paper, avoiding overcrowding (use two sheets if necessary).
Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
Remove from the oven and let them cool slightly. Optionally, sprinkle with extra za’atar for a more intense flavor.
Serve hot with dips like tahini sauce, garlic yogurt, hummus, or labneh. They’re also great alongside grilled meats, falafel, or shawarma.
